Enjoy these delicious vegan Beet Brownies!

Ingredients are below. But first a few tips!
1. Buy the beets from a store and bake or boil them yourself! Its makes all the difference and also, if you use store bought ready cooked beets you will have to change the recipe. Trust me.. I’ve tried it with ready cooked beets that i bought from the store and the recipe failed. So if you want yummy beet brownies boil or bake them yourself! 🙂
2. Use vanilla bean powder in this recipe! Do not use a full vanilla bean as the food processor wont blend it up and you will get chunks of vanilla bean in your brownie.
3. Don’t skip the vanilla bean powder. Its just too good. 🙂
Ingredients for the Beet brownies:
7 cooked and peeled beets ( you can bake them in the oven or boil them)
10 pitted medjool dates
½ cup cacao powder
3 tbsp coconut oil
1 1/4 cup coconut flour
1 cup oat flour
1 1/2 tbsp vanilla bean powder
1 tsp baking soda
½ tsp baking powder
1 flax egg ( 1 tbsp flax flour + 3 tbsp hot water)
1 tbsp vinegar
1/3 cup of vegan milk
How to make the brownies:
Combine the beets and the medjool dates in the food processor and process until smooth. Add the rest of the ingredients and process until smooth. Pour into a baking tray and bake for 20 minutes at 180 degrees Celsius.
4 tbsp cacao powder 3-4 tbsp maple syrup 1 tbsp vanilla bean powder 2- 3 tbsp hot water 1 tbsp coconut oil.
